Cauliflower (Brassica oleracea var. botrytis) belongs to the genus Brassica and family Brassicaceae, or the mustards. It is an annual plant that reproduces by seed. Cauliflower is a flowering plant with leaves wrapped around its stem forming a “head”. The head is a white inflorescence meristem and is sometimes called a “curd”.

Cauliflowers are grown in four groups across different regions of the world - Asia, Northwest Europe Biennial, Northern Europe Annual, and Italian. The most prevalent kind of cauliflower is white.

  • Cauliflowers are annual plants that reach about 0.5 metre (1.5 feet) tall.
  • They bear large rounded leaves that resemble collards (Brassica oleracea, variety acephala). 
  • As desired for food, the terminal cluster forms a firm, succulent “curd,” or head, that is an immature inflorescence (cluster of flowers). 
  • The broad leaves extend far above the curd and are often tied together before harvest to shade the curd and prevent discoloration. 
  • Commercially, white cauliflower is the most common, though orange, purple, green, and brown cultivars also exist. 
  • The plants produce cross-shaped yellow flowers and bear seeds in dry capsules known as siliques.

  3. Purple Cauliflower- Purple cauliflowers are one of the most vibrant and striking large vegetables that are grown in the garden. The deep purple curd is surrounded by bluish-green leaves.
  4. Orange Cauliflower- Orange cauliflower gets its coloring from additional beta carotene, which also gives carrots their color. Orange cauliflower is called “cheddar” cauliflower because it has the color of cheese.
