Furfural is an organic compound which has the chemical formula C4H3OCHO. It is a colourless liquid but its commercial samples are usually brown in colour. This compound has an aldehyde group attached to the 2-position of Furan.

In the reaction as an aldehyde, furfural has a strong similarity to benzaldehyde. So, it undergoes Cannizzaro reaction in a strong aqueous alkali, furfural dimerizes into furoin which has a chemical composition C4H3OCO-CHOH-C4H3O, under the action of potassium cyanide.
Then, it is further converted into hydro furamide, (C4H3O-CH)3N2 through the action of ammonia. Furfural is degraded and split to formic acid and formyl acrylic acid on exposure to the air at room temperature.

- Fulfural can be found in many foods: coffee and whole-grain bread.
- It is a renewable, non-petroleum based chemical raw material.
- It can be converted to a variety of solvents, polymers, fuels and other different chemicals by a range of catalytic reactions.

- Saturated Fats - These fats are also known as solid fats because they exist in solid form at room temperature. The basic carbon structure of these fatty acids is saturated with hydrogen atoms. These fats may increase health risks if a person consumes a lot of fats over a long period of time.
- Unsaturated Fats - These fats are also known as good fats as they exist in liquid form at room temperature and also they are mostly derived from plant oils. These are of 2 types: Monounsaturated fats and Polyunsaturated fats.
- Monounsaturated fats - These fat molecules are not saturated with hydrogen atoms, each fat molecule has bonded with one hydrogen atom. They are responsible for lowering LDL or bad cholesterol and maintaining healthy levels of good high-density lipoprotein(HDL) cholesterol.
- Polyunsaturated fats - These fat molecules are not saturated with hydrogen atoms. A type of polyunsaturated fat is omega-6 fatty acids, these mostly occur in vegetable oils and processed foods.
- Trans Fats - Trans fats are those fats which are manufactured. They are the product of a process that adds hydrogen to liquid vegetable oils to make them more solid. These fats are also known as partially hydrogenated oils. These fats raise the level of LDL cholesterol and lower the level of HDL cholesterol. This results in increasing the risk of heart disease, stroke and type 2 diabetes.
